Vegan Banana Peanut Butter Maple Syrup Pancakes

Good Afternoon everyone!

I have created brunch godliness!! These delicious vegan-friendly maple syrup pancakes and yes it gets better, a banana peanut butter home-made ice cream to whack on top! It is very simple to make and it’s a far healthier than it might sound. I am half American and pancakes hold dear to my heart, especially when they are covered in maple syrup (Homer Simpson drooling moment). I have tried to change my lifestyle and become healthier with what I ingest into my body and cut down on animal products as well as processed food products. I hope you have fun creating these awesome vegan-friendly pancakes and enjoy every last crumb!


Ingredients

For 8-10 pancakes (depends on size):
  • 1 cup of plain flour
  • 1 tbsp of baking powder
  • 1 cup of plant-based milk
  • 1 tbsp of maple syrup or agave
  • 1 tbsp of coconut oil
  • 1 tsp of sweet cinnamon
  • 1/2 tsp of ground ginger
For ice-cream:
  • 3- 4 bananas
  • 1 tbsp of peanut butter (crunchy or smooth)
Toppings:
  • Banana chips (crushed)
  • Maple Syrup

Method
